Right from the tribal farmer to the organic agriculture experts, to the women who pick the coffee cherries, and the international jury that has helped us refine our methodology, all of them share our obsession for perfection. Years of dialogue and training has helped our farmers pick just the right shade of red.
It is all about sweetness, and as our soils promote optimal bush health it is reflected in the increase in brix levels of our cherries. This is why our farmers hand pick the darkest reds for us to process.
